Catarratto and grillo grapes (80 and 20 per cent, respectively) from a 40-year old vineyard with “alberello” (sapling) training system in the nearby inland of Marsala, at an altitude of 100 meters above sea level. Vinified in steel or fiberglass tanks with a 2-day skin maceration, spontaneous fermentation with wild yeasts, 7 months of aging on lees. Unfiltered.
